Potato Cheese Croquettes or Casserole

1 1/2 lbs potatoes, peeled and quartered
3 T butter
3 T milk
salt, pepper to taste
3/4 cup cheddar cheese
opt: chopped spinach, sliced scallion
1 egg
Panko
Oil for frying

Cook potatoes, drain, mash with butter, milk, salt and pepper. Stir in cheese and optional spinach and scallions. Let cool slightly, beat in egg.
Drop potatoes by 1/4 cup into panko. Form into patties or logs. Refrigerate until firm. Fry in oil, or spray with cooking spray and bake in 400 oven until browned.

Optional – instead of forming into panko coated patties, can also place potato mixture in baking dish sprayed with cooking spray and bake until potatoes are hot and top is browned.
