PA Dutch Potato Cakes

2 cups leftover mashed potatoes, cold
1 egg
1 T flour
1 T milk - more or less as needed
1 T minced onion or scallion

2 T butter plus 2 T oil for frying

Mix ingredients and heat butter/oil to med-low in large skillet.
Using ice cream scoop, drop scoops of potatoes into skillet (should make about 8). Let cook for 15 minutes or until the bottom has formed a golden brown crust. Flip over and flatten with a spatula to form patties. Cook an additional 15 minutes or until golden brown on both sides.
Makes 4-6 servings
