Mashed Potatoes

8 medium potatoes
1/4 cup butter
1/2-1 cup milk, as needed
1/2 tsp salt, or to taste
pepper to taste

Peel potatoes, rinse and cut into equal sized pieces.
Place in large saucepan and barely cover with water. Cover and heat to boiling over high heat. Once boiling, reduce heat to a simmer and leave lid askew for steam to escape.
Cook 15-20 minutes or until potatoes are tender when pierced with a fork. Drain.
Add butter, milk and salt and pepper, let sit until butter is melted and milk is warm.
Mash with hand mixer or potato masher. Add more milk if needed, and add additional salt and pepper if needed.

6 servings.
