Individual Potato Gratins

6 pats of butter, 1 tsp each
2 medium russet potatoes, thinly sliced
Salt and freshly ground black pepper
1 cup grated cheese*
2 green onions, finely chopped*
6 T heavy cream

Place 1 pat butter in each muffin tin
Layer potato slices, cheese, and onions into each muffin cup.
Season with salt and pepper and top each gratin with 1 tablespoon of cream.
Cover with foil and bake at 375 for 30 to 40 minutes, removing the foil halfway through cooking time.
Run a knife around each gratin. Place a baking sheet on top of the pan and invert to release the gratins. Flip right side up and serve.

*optional - can omit cheese and onions and just season with salt and pepper between layers.
