Home Fries

4 potatoes, sliced
1 T olive oil
1 T butter
1/4 cup water
Salt, pepper
1 onion, chopped
opt: garlic, paprika

Cook potatoes in skillet with oil, butter and broth.
When broth has evaporated and potatoes are slightly tender, season potatoes and stir in onions. Do not stir or flip potatoes until browned on the bottom.
Flip, brown on other side. If adding garlic, add for last 30 -60 seconds of cooking time.
