Crash Hot Potatoes

New potatoes (or other small round potatoes)
Olive oil, for drizzling
Kosher salt, to taste
Black pepper, to taste
Rosemary (or any desired herb)

Boil as many potatoes as you wish to make in salted water until they're fork-tender
Drizzle sheet pan generously with olive oil.
Place tender potatoes on sheet pan, leaving plenty of room between each potato.
With a potato masher or bottom of glass, gently press down each potato until it slightly mashes to half its height.
Brush the tops of each crushed potato generously with more olive oil. Sprinkle with salt, pepper and herbs.
Bake in 450 degree oven for 20-25 minutes or until golden brown.
