Cheddar Potato Bake

4 large unpeeled potatoes (I like reds for this)
Cindy's note - can add sliced shallots or scallions
2 tablespoons butter
1 teaspoon Kosher salt
fresh ground pepper; to taste
1 cup shredded cheddar cheese
chopped parsley

Thinly slice potatoes; rinse well in cold water and drain. Grease a shallow 2-quart baking dish.
Lay potatoes in dish.
In a small saucepan, heat butter, salt and pepper until butter is melted. Drizzle over potatoes.
Cover with foil and bake at 425° for 45 minutes.
Sprinkle with cheese and parsley and continue to bake uncovered 15 minutes longer
