Baked Sweet Potato

To oven bake:
Prick the skin of the sweet potato a few times with a knife or fork and cut off woody ends, place on a cookie sheet.
Bake at 375 for 45 minute to 1 hour, depending on size and desired doneness.

To bake in the microwave:
Prepare as for oven baking.
Place on paper towel on microwave-safe dish. Cook on high for 4-5 minutes for the first potato, plus 2-3 minutes for each additional potato.

Our favorite sauce to serve with sweet potatoes is:

Chipotle Mayo
1 Chipotle pepper (canned in adobo), minced
few teaspoons of adobo sauce from can
1/2 to 1 cup mayonnaise (use more mayo for milder sauce)
