Sweet Potato Sausage Chili

1 lb sausage
2 onions, chopped
2 cloves garlic, minced
1 T chili powder (can use 1 chipotle, minced plus some adobo sauce)
1 tsp oregano
1/2 tsp cumin
opt: cayenne pepper, to taste
1 (28 ounce) can diced tomatoes, juice included
2 medium sweet potatoes, peeled and chopped (approx. 1/2" cubes)
1 (19 ounce) can red kidney or black beans, drained and rinsed
salt and pepper to taste

Remove sausage casings and crumble sausage meat into soup pot.
Brown sausage over medium heat until no pink remains, drain if necessary.
Add onion, garlic, chili powder, oregano, cumin and cayenne (if using) to sausage, cook for 2 minutes.
Add tomatoes and their juice, beans and sweet potatoes to meat mixture.
Increase heat to medium high, bring to a boil, stirring often.
Cover, reduce heat to low and simmer for 30 minutes or until potatoes are soft.
Stir occasionally, season to taste

Serves 4-6
