Baked Ziti with Sausage and Spinach

1 pound Italian sausage, crumbled
1 onion, chopped
2 garlic cloves, minced
opt: crushed red pepper flakes to taste
1 (28oz) can diced or crushed tomatoes
1/2 tsp kosher salt
few grinds fresh pepper
1 tsp dried oregano
1/2 tsp dried basil

12 ounces ziti or penne pasta, cooked and drained (can use whole grain)
10 oz pkg fresh spinach
8 ounces mozzarella cheese, cubed
1 cup grated Parmesan cheese, divided

Saute sausage, onion and garlic until sausage (use a little oil if needed) is cooked, about 10 minutes.
Add tomatoes, salt, pepper and herbs. Simmer about 10 minutes,
Combine pasta, spinach, mozzarella and 1/3 cup parmesan, stir in sausage sauce.
Turn into sprayed 13x9 baking dish, top with remaining parmesan cheese and additional mozzarella, if desired.
Bake at 375 for 30 minutes until cheese is melted.
