Biscuits and Sausage Gravy

Top biscuits with choice of:

Sausage Gravy
1/2 pound store bought or homemade sausage
1/4 cup flour
2 - 2 1/2 cups milk (depending on desired thickness)
salt and pepper to taste

Cook sausage, crumbling well. Pour off all but 1/4 cup of grease (add fat if needed). Sprinkle flour on top. Increase heat to high and cook, stirring, until flour starts to brown. Add milk, stirring constantly and continue cooking until gravy thickens. Add salt and pepper.

Milk Gravy
1/4 cup bacon grease
1/4 cup flour
2 - 2 1/2 cups milk (depending on desired thickness)
salt and pepper to taste

Combine bacon grease and flour, cook in skillet until flour is browned. Add milk, cook until thickened. Season with salt and pepper.

Serve choice of gravy over biscuits - makes enough to cover about 6 biscuits (3 servings)


This biscuit recipe makes more than enough biscuits (about 12-14) - I always like having extras, so make the whole recipe anyway.
Country Biscuits
Source: combination of recipes

2 cups flour
1 T baking powder
1/2 tsp salt
1/2 cup shortening, lard or butter (I use butter)
1 cup milk (cream) or buttermilk (if using buttermilk add 1/2 teaspoon baking soda)

Mix the flour with the baking powder, and salt.
Cut in shortening with pastry blender or your hands until it resembles coarse meal.
Stir in milk or cream.
Mix quickly with fork or your hands just until dough comes together, do not over handle.
Pat out to about 1/2 to 3/4 inch thick on a lightly floured board.
Cut with biscuit cutter (straight down then twist) and place on an aluminum baking sheet with biscuits barely touching (to keep from spreading). Use thumb to make an indentation in each biscuit to prevent doming.
Bake at 450 for approximately 15-20 minutes. Makes about 14 biscuits.
