Sausage Fra Diavolo

3/4 pound sausage, removed from casing and crumbled
1 small onion, chopped
1 clove garlic, minced
optional: 1 cup mushrooms, sliced
1 (28 oz) can crushed tomatoes
1/2 cup white wine
1 tsp crushed red pepper, or to taste
herbs of choice rosemary, sage, oregano, basil
1/2 tsp kosher salt
fresh ground black pepper
opt: couple handfuls baby spinach
1/2 cup freshly grated Parmesan, divided
1/2 pound fresh mozzarella, half cut into 1/2-inch cubes and half thinly sliced

1/2 lb penne, uncooked

Saute sausage, onion, garlic and mushrooms until sausage is cooked through.
Add crushed tomatoes, wine, and crushed red pepper, simmer for 10 minutes. Season to taste.
Meanwhile, cook pasta according to package directions, drain.
Combine cooked pasta with the sauce, 1/2 of the Parmesan and the cubed mozzarella pieces.
Transfer to a sprayed baking dish.
Top with the sliced mozzarella, and sprinkle with the remaining Parmesan.
Bake at 400 until lightly browned and hot, about 30 minutes.
