Breakfast Sausage
Source: adapted from the Culinary Institute of America

2 pounds ground pork, chilled
1 T kosher salt
1 3/4 tsp ground black pepper
1 1/2 tsp poultry seasoning
optional: for spicier patties, add red pepper flakes or hot pepper powder
1/3 cup ice-cold water

1. Mix the ground pork, salt, pepper and poultry seasoning on low speed of electric mixer until evenly blended, about 1 minute.
2. Mix for an additional minute, gradually adding the cold water.
3. Mix on medium speed for 15-20 seconds, or until the sausage mixture is sticky to the touch.
4. Shape into 12 patties, or desired size*. Freeze raw patties or cook immediately (3-4 minutes per side on med heat) to use or freeze for later.

*Tip - press out patties between 2 pieces of waxed or parchment paper with a glass pie plate. Press out wider and thinner than you think you will need since they shrink when cooking.
