Pulled Pork
Source: my best attempt to recreate the pulled pork we had at the Kutztown Folk Festival
Rub:
2 T paprika (opt: smoked paprika)
1 T salt
1 T coarse fresh ground pepper
1 tsp cayenne pepper
opt: 1 T brown sugar
1 5 pound bone-in pork butt
1 onion, sliced
1 clove garlic, chopped
opt: chipotles, minced
Combine rub ingredients, rub into pork butt, place in plastic bag and refrigerate for 24 hours.
Place onion slices and minced garlic in bottom of crock-pot, place rubbed pork butt on top of onion and garlic.
Cook on low for 10 hours or until falling off the bone.
Remove pork and shred, removing bones and fat. Strain drippings and reserve to add to sauce.
Combine meat with sauce and serve on rolls with coleslaw.
Sauce:
1 T oil
1/4 cup onion, minced
1 clove garlic, minced
8 oz tomato sauce
1 chipotle pepper, minced (or to taste)
1 T adobo sauce from chipotle can
1/4 cup cider vinegar
2 T brown sugar
1 cup or more pan drippings from pork, to taste
Saute onion in oil until soft, add garlic and cook for 30 seconds.
Add remaining ingredients and cook until slightly thickened.
