Basic Pork Sausage (updated 7/14/16)
Note - we like our sausage on the spicy side - you can decrease black pepper and cayenne to your own taste.

1 lb ground pork (I prefer a good amount of fat, 80% lean)
1 1/2 tsp kosher salt (1 tsp regular salt)
1/2 tsp fresh coarsely ground black pepper (1/4 tsp regular pepper)
1/4 tsp cayenne pepper (or to taste)
1/4 tsp ground sage
pinch thyme

Combine ingredients, mix well. If desired, cook small amount to taste for seasonings.
Stuff into casings, form into patties or use as bulk
