Pork Butt with Sauerkraut, oven roasted

3 pound pork butt, room temp (take out of refrigerator for 1 hour before cooking)
1 pound sauerkraut, with juice

Preheat oven to 450
Place pork in roasting pan, sprinkle liberally with salt and pepper on all sides, or as desired. Make sure that fattiest part is on top.
Place pork in oven, uncovered. Immediately turn oven temperature down to 250 for electric oven. (For gas oven, let pork cook at 450 for 15 minutes before turning heat down to 250)
Let cook uncovered at 250 for 2 hours.
Spread sauerkraut around and on top of pork, cover and cook for an additional hour at 250, or until internal temp of pork reaches 180.
Take roast out of oven and let rest for 15 minutes
Slice or pull roast into chunks, or shred if desired. Serve with sauerkraut.
