Homemade Italian Sausage
Note - all ingredients can be adjusted to taste. Recipe can easily be doubled or more for larger batches.

1 pound ground pork
1 tsp paprika
1 tsp salt
1 tsp fresh ground black pepper
1 clove garlic, minced
1/2 tsp crushed fennel seed
1 T chopped fresh parsley
1/2 tsp cayenne pepper
1/2 tsp hot red pepper flakes
1 T dry red wine

Combine all ingredients, let sit for a few hours or overnight for flavors to combine.
Cook as loose to use in recipes, stuff in casings, or shape into patties and fry.
