Ham and Swiss Casserole

2 cups uncooked noodles (about 5-6 oz)
1 T oil
1 cup onion, chopped
1 cup sliced mushrooms
1 cup chopped ham
1 cup swiss cheese, diced
1 tsp kosher salt
1/4 tsp black pepper
opt: pinch thyme
2 eggs
1/4 cup milk
1/4 mayo
1 T dijon mustard
opt: shredded fresh parmesan cheese

Cook and drain noodles.
Saute onion and mushrooms in oil until onions are soft. Let cool to room temp.
Combine noodles, ham, swiss cheese, seasonings and onion mixture.
Combine egg, milk, mayo and mustard; stir into noodle mixture.
Transfer to a greased 2 qt casserole.
Bake at 375 for 30 minutes stirring halfway through.
Top with optional cheese for last 5 minutes of baking
Makes 4 servings
