Ham and Cabbage Skillet

2 T butter
1 onion, chopped
1 small head cabbage, coarsely chopped or small wedges
1/4 cup water or chicken broth, plus more
3 large potatoes, scrubbed and cut in 1/8's or 6 small potatoes - whole or halved depending on size
opt: 2 carrots, cut in 1 inch chunks
2 cups cubed cooked ham or cooked sausage links, sliced
opt: whole black peppercorns, about 1 or 2 T
salt, to taste

In a large skillet over medium heat, saute onions in the butter. When tender add cabbage, pour 1/4 cups water or broth over, cover and simmer gently on medium low for 10 minutes.
Add potatoes (and opt carrot) and additional liquid, if needed. Cover and simmer for 20 more minutes, stirring and checking for liquid after 10 minutes. Cook until cabbage is soft and potatoes are nearly cooked.
Add ham to skillet and finish cooking until ham is hot and potatoes are done. Check for seasoning and add salt, if needed.
Makes 4 servings
