Ham Broccoli Cheese Pasta (updated 10/17/23)

1/2 cup mayonnaise
1/4 cup milk
1-1/2 cups (6 oz) dry rotini pasta
1-1/2 cups ham, diced
2 cups broccoli florets, cut in bite size pieces
1/2 cup diced red pepper
opt: 1/4 cup diced onion
1 cup diced cheddar cheese
1 cup shredded cheddar cheese for top

Cook pasta according to package directions.
Whisk together mayo and milk.
Combine pasta, ham, broccoli, red pepper and diced cheese, toss with mayo/milk until evenly coated.
Spoon into 1-1/2 qt casserole sprayed with cooking spray, top with shredded cheese.
Bake at 350 for 30 minutes or until heated through.
