Sous Vide Country Ribs

2 T kosher salt
1 T freshly ground pepper
1 T dried oregano
1 tsp onion powder
1/2 tsp garlic powder
3 lbs country style pork ribs

1 T cornstarch
2 T water
3 T dijon mustard

Pre-heat water bath to 140 degrees
Mix together salt, pepper, oregano, onion powder and garlic powder.
Rub ribs with seasoning mixture, place in plastic bag, remove air and place in sous vide bath for 24 hours.
Mix the cornstarch with water in a small bowl until dissolved.
Drain liquid from bag into saucepan over med-high heat, add cornstarch mixture and dijon mustard. Whisk until combine and cook until thickened.
Brown ribs - sear in hot pan or grill briefly. Serve with sauce.
