Tart Dough

2 cups flour
2 tablespoons sugar
Pinch of salt
1 egg yolk
1/2 cup water
1/2 cup butter, cut into small pieces and softened

Sift the flour into a mixing bowl, make a well in the center and put the sugar, salt, egg yolk and water into the well. Work together. Add the butter into the pastry. Roll into a ball and place in the refrigerator for 1 hour.

Roll out the pastry to 1/4" thickness and put into a buttered tart pan.
