Strawberry Cream Cheese Pie/Tart with Chocolate
Source: combination of several recipes
1 pie or tart shell, baked and cooled (for Holly - especially good with French Pastry Dough)
Chocolate Ganache:
2 oz bittersweet or semi-sweet chocolate, chopped
1/4 cup heavy cream
1 T unsalted better, softened
Cream Cheese Filling:
8 oz cream cheese, softened
1/2 cup 10Xsugar
1/2 tsp vanilla
2 T milk
1 quart fresh strawberries, hulled
1/2 cup strawberry jam, heated if necessary
Mix strawberries with jam until glazed, set aside.
Place chocolate in heatproof bowl.
Heat cream on stovetop or microwave until bubbling (only takes 30 seconds in MW).
Pour hot cream over chocolate and let sit 1-2 minutes until chocolate is melted. Whisk together until smooth.
Whisk in butter.
Spread about 2/3 ganache over bottom of pie or tart shell, reserve remaining for top.
Let ganache set before spreading with cream cheese layer.
Beat cream cheese and sugar until smooth. Beat in vanilla and milk.
Spread over chocolate layer.
Top with strawberries and drizzle remaining ganache over the strawberries. (Use a pastry bag or reheat to drizzling consistency)
Chill until ready to serve.
