Shoofly Pie

1 unbaked 9" pie shell Click for recipe

Crumbs:
1 cup flour
1/2 cup packed brown sugar
1/2 tsp baking powder
pinch salt
6 T butter, softened

Filling:
1 cup packed brown sugar
1 egg
1/2 tsp baking soda
1 cup boiling water, cooled slightly
1/2 cup molasses (can sub dark corn syrup if desired or even better PA Dutch table syrup if you have it)

Crumbs: Combine flour, brown sugar, baking powder and salt. Cut in butter until crumbly. Set aside.
Filling: In a large bowl, whisk together the sugar and egg.
In a separate bowl, whisk together the hot water and baking soda. Stir in the molasses or syrup and mix until dissolved.
Add the hot water mixture to the egg mixture and stir to combine.
Pour the filling into the unbaked pie shell, sprinkle the crumbs over the filling.
Bake at 350 for 50-55 minutes.
