Rhubarb Pie
1 9" unbaked pie shell
5 cups 1/2" rhubarb slices
1 cup sugar
1/4 cup flour
1/2 tsp lemon juice
1/4 tsp salt
Crumbs:
3/4 cup flour
1/2 cup sugar
pinch salt
6 T butter, cut in cubes
For crumbs: Combine flour, sugar and salt. Cut in butter, gently tossing with a fork or hands to form loose crumbs.
Combine pie filling ingredients, turn into unbaked pie shell, top with crumbs.
Bake 425 15 minutes, lower heat to 350, bake 40-50 minutes more.
NOTE: for Strawberry Rhubarb, use 3 cups rhubarb and 2 cups strawberries
