Stuffed Shells

24 jumbo shells (about 6 oz), slightly undercooked, drained

Filling:
16 oz ricotta
8 oz mozzarella, shredded
1/2 cup parmesan cheese
1 egg
1 tsp salt
1/4 tsp pepper
1 T fresh or 1 tsp dried herbs, oregano, basil and parsley any combo

Optional:
1/2 pkg frozen spinach (5 oz)
2 T onion, minced
Saute spinach and onion until spinach is dry and onion is softened

8 oz sausage, cooked and crumbled

additional mozzarella and parmesan cheese


Combine filling ingredients, can stuff shells with just cheese mixture, or add choice of spinach/onion and/or sausage to part of filling. Fill shells.
Place in a 13x9 pan that has been spread with marinara sauce. Top with more sauce.
Cover with foil and bake at 350 for 30 minutes, remove foil, top with mozzarella and parmesan and bake until browned and bubbly, about 15 more minutes, Let stand 10 minutes before serving.
