Spaghetti Pie
8 oz thin spaghetti, broken into thirds
2 eggs, beaten
1/2 cup parmesan cheese
1 lb ground beef, sausage or combo of both
1 small onion chopped
1 small green pepper, chopped
1 clove garlic, minced
opt: sliced mushrooms
3 cups marinara sauce, or as needed
salt, to taste
8 oz mozzarella, shredded - more if needed
Cook pasta according to package directions, drain, cool. Combine with eggs and parmesan cheese, press into sprayed 9x13 baking pan.
Brown meat with onion, green pepper, garlic and mushrooms, drain if necessary. Stir in marinara sauce, salt to taste.
Spoon over pasta, top with cheese.
Bake at 375 for 30 minutes

Sauté together:
1 large chopped onion
1 medium green pepper (about 3/4 of a cup)
1 cup of chopped mushrooms
1# of ground beef
Cindy's note - to above I add 1 clove garlic, minced
add: 2 tsp salt
1 tsp sugar
2 1/2 # can of chopped tomatoes
boiled spaghetti
Italian seasoning
Pour the mixture into a greased 9 x 11 pan and sprinkle with a little grated cheese. Bake at 350 for 30 minutes
