Creamy Tomato Sausage Pasta
Source: combination of recipes
8 oz penne or pasta of choice
2 T olive oil
1 small onion, chopped
1 medium green bell pepper, chopped
1 lb ground pork*
1 tsp red pepper flakes, or to taste*
(*can sub hot sausage)
1 tsp kosher salt
2 cloves garlic, minced
28 oz crushed tomatoes
1/4 cup sour cream or heavy cream
1/4 cup parmesan cheese, freshly grated
In a large pot, cook the pasta according to the package directions, drain.
Saute the onion, green pepper and pork or sausage in oil over med-low heat, cook until veggies are tender crisp and pork is almost done.
Add garlic and cook 30 seconds.
Stir in the tomatoes, cook until hot, remove from heat and let cool 1-2 minutes.
Gradually stir in the sour cream and parmesan. Season to taste.
Stir in the pasta, return to low heat to warm if necessary.
