Pasta Primavera
2 cups broccoli or asparagus, cut into 1-inch pieces
2 cups penne pasta, uncooked
1 T olive oil
1 small onion, minced
2 garlic cloves, minced
1/4 cup dry white wine
2/3 cup heavy cream
1/4 cup grated Parmesan cheese
salt, pepper, parsley to taste
optional - stir in tomatoes or spinach
Cook pasta according to package instructions, add asparagus or broccoli for last 3 minutes of cooking time.
In the meantime, heat oil in a large skillet over medium-high heat.
Saute onion until soft, add garlic and cook for 30 seconds.
Add the wine and cream, cook for 2 minutes
Add pasta, veggies and cheese. Stir well
