Macaroni and Cheese (updated 12/7/23)

16 oz elbow macaroni
5 T butter
1/4 cup onion, minced
5 T flour
1 tsp salt, or to taste
1 1/2 tsp dry mustard
5 cups milk
16 oz shredded cheddar

Optional topping:
1 cup plain breadcrumbs
1/4 cup butter, melted

Cook macaroni, drain.
Saute onion in butter until soft. Add flour, salt and mustard; whisk together until smooth.
Add milk, heat over medium heat, whisking, until thickened and bubbly, do not overboil.
Add cheese, stir until melted.
Combine pasta and sauce, pour into greased or sprayed 13x9 baking dish.
Optional: combine butter and breadcrumbs and spread over top
Bake 350 for 30-35 minutes or until browned on top.
