4 thick lamb chops, trimmed of excess fat
Dijon mustard
Balsamic vinegar
Rosemary
Minced garlic
Olive oil
Salt and pepper to taste

Spread chops with a little of the mustard. Sprinkle with vinegar, seasonings and a little olive oil. Turn to rub in both sides. Let marinate about 30 minutes.

Meanwhile, heat the grill. Grill chops over high heat until done, about 4 minutes per side for medium-rare. SERVES 4
