Shrimp Scampi
Source: combination of recipes

4 T butter
4 T olive oil
2-3 cloves garlic, minced (add more to taste)
1-2 pounds raw, peeled, deveined shrimp (defrosted if frozen), patted dry
1/2 cup white wine or chicken broth, or combo of both
1/2 tsp kosher salt, or to taste
2 T fresh lemon juice
opt: pinch crushed red pepper flakes
opt: parsley, chopped

Melt the butter and olive oil over medium-high heat
Add minced garlic to the pan and cook just until fragrant, about 30-60 seconds
Add the wine and/or broth, salt and optional red pepper flakes to the pan and cook for a few minutes, until reduced by half.
Add shrimp, saute for 3-4 minutes, or just until pink and opaque. Stir in lemon juice (and parsley if desired).
Remove from heat and serve over linguine.
Makes 4 servings
