Cod - Pan fried

2-3 cod filets, about 1 pound
3 T flour
1/2 tsp salt
few grinds of pepper

1 T butter plus 1 T oil for cooking

Mix flour, salt and pepper together in shallow bowl or plate
Pat fresh or thawed cod filets dry with paper towel
Heat butter and oil in pan until hot
Dredge filets in flour mixture, shake off excess.
Fry over medium heat until golden, 2-4 minutes per side depending on thickness.
