Waffles

2 eggs
1 1/2 cups milk
1/2 cup vegetable oil
1 tsp vanilla
2 cups flour
1 T baking powder
1 T sugar
1/2 tsp salt

Preheat waffle iron.
Whisk together eggs, milk, oil and vanilla until frothy.
Add dry ingredients and whisk until smooth.
Pour 1 cup batter onto waffle iron, cook about 3 1/2 minutes or until steaming stops.
Makes 4 (16 quarters) waffles

To keep warm and crisp: Set oven to 150°, place waffles directly on oven rack
