Sour Cream Pancakes updated 2/28/23
Source: adapted from Cooks Illustrated

2 cups all-purpose flour
2 T sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 cups buttermilk
1/4 cup sour cream
2 eggs
3 T unsalted butter, melted

Whisk dry ingredients together in bowl. In another bowl, whisk together buttermilk, sour cream, and eggs.
Add wet mixture to dry ingredients, stir briefly. Add butter and stir just until batter is combined but still lumpy (do not overmix). Let batter rest for 10 minutes while heating griddle.
Butter or spray griddle with cooking spray, heat over medium heat (350F).
Pour batter by scant 1/4 cupfuls onto griddle. Cook until bubbles break on surface, about 3 minutes. Turn pancakes over, cook until bottoms are golden.
Makes 16 pancakes
