Sausage Egg Cups

1 lb bulk pork sausage
Opt: add chopped onions, peppers, mushrooms or spinach to sausage meat.
8 eggs, slightly beaten and seasoned with salt and pepper
8 slices American cheese, or cheese of choice
Press sausage into 8 muffin tins, pressing up sides.
Bake at 400 for 20 minutes.
Add 1 egg into each sausage cup and return to oven for 15 minutes.
Place 1 slice American cheese over each cup and return to oven for 1 minute.
Mexican – add salsa to egg and top with jack or pepper jack cheese.
