Self-crusting Quiche (updated 1/4/25)
Source: combination of recipes

1/2 cup flour
1 tsp baking powder
1 tsp kosher salt
1 1/2 cups milk
4 eggs, beaten
1 med onion, chopped, sauteed
2 cups veggies or meat of your choice - cooked or sauteed as needed
1 cup shredded cheese of your choice

Whisk together flour, baking powder and salt in large bowl.
Add half of milk into flour mixture, whisking until smooth.
Whisk in remaining milk and eggs.
Stir in onion and choice of veggies, meats and cheeses.
Pour into greased or sprayed 10" pie plate or 11x7 rectangular dish.
Bake at 350 for 45-60 minutes until center is set and top is browned.
Let cool for 10 minutes. Can be eaten hot or at room temp.
4-6 servings

Favorite combinations:
spinach, mushrooms, onion, swiss and cheddar cheese
hot sausage, red and green peppers, onion, pepper jack cheese
