Crustless Quiche Cups

2 T butter
2 cups fresh sliced mushrooms
4 green onions, chopped
2 cups baby spinach leaves
4 eggs, beaten
1/2 cup milk
salt and pepper, to taste
about 1 cup shredded cheese, more if needed

Saute mushrooms and onions in butter until softened, but firm. Stir in spinach, cook just until wilted.
Divide mushroom mixture evenly among 6 muffin tins that have been sprayed with cooking spray. Top each with a scant 1/4 cup cheese.
Whisk together eggs, milk and salt and pepper. Pour over filligs, dividing evenly.
Bake at 350 for 20-30 minutes or until puffed and golden.

can substitute other fillings such as sauteed ham or bacon, potatoes, onion, green pepper, brocoli .....
