Quiche

Basic egg mixture:

1-1/2 to 2 cups shredded cheese (swiss, cheddar, monterey jack, pepper jack)
2 T flour
4 eggs
1 1/2 cup half and half or 3/4 each whole milk and heavy cream
1 tsp salt
dash pepper

9 in unbaked pie crust

Choose from:
Onion 1/4 cup
Shallot 1/4 cup
Red or Green pepper 1/4 cup
Feta 1/2 cup
Bacon 6 slices, crumbled
Ham 1 cup
Sausage, cooked and crumbled, 1 cup
Shrimp or crabmeat, cooked 1 cup
Spinach 10oz pkg froz, thawed, drained
Broccoli 1-2 cups
Asparagus 1-2 cups
Zucchini, grated, drained
Artichoke hearts
Mushrooms 1 cup
Black olives

If needed, saute or steam choice of vegies/meat, cool. Toss cheese with flour. Whisk together eggs, milk, salt, pepper.
Combine cheese, choice of vegies/meat and egg mixture, pour into shell. Bake 350 for 60-70 minutes or until set. This makes a large quiche, I use a 9-10 in pie plate.
