Buttermilk Pancakes (updated 7/2/23)

1-1/2 cups all-purpose flour
2 T sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 teaspoon salt
1 cup buttermilk (a little more if batter is too thick)
2 large eggs, room temperature
1 tsp vanilla
1/4 cup butter, melted
Optional: Mixed fresh berries, whipped cream, maple syrup and butter

1. In a large bowl, whisk together flour, sugar, baking powder, baking soda and salt. In another bowl, whisk together buttermilk, eggs and vanilla. Stir wet ingredients into dry ingredients along with melted butter. Mix just until moistened.
2. Preheat griddle over medium heat. Lightly grease griddle. Pour batter by 1/4 cupfuls onto griddle; cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is golden brown. Serve with toppings as desired.
