Buttermilk Pancakes (updated 4/6/25)

6 T unsalted butter, melted and slightly cooled
2-1/4 cups all-purpose flour
1/3 cup sugar
1-1/4 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 eggs
2 cups buttermilk
1 tsp vanilla
In a large bowl, whisk together flour, sugar, baking powder, baking soda and salt. In another bowl, whisk together eggs, buttermilk and vanilla.
Stir wet ingredients into dry ingredients then add melted butter. Mix just until moistened.
Preheat griddle over medium heat, grease with butter.
Pour batter by 1/4 cupfuls onto griddle; cook until bubbles on top begin to pop and bottoms are golden brown. Turn; cook until second side is golden brown.
Serve with toppings as desired.
Makes 15 4" pancakes
