Herb Popovers
Source: combination of recipes

2 T butter
2 T fresh chopped sage
2 T chopped scallions
1 cup all-purpose flour
1/2 teaspoon salt, or to taste
1 cup whole milk at room temp
2 large eggs, room temp
1/2 cup fresh grated parmesan cheese

Saute sage and scallions in butter until softened, let cool.
Beat flour, salt, milk and eggs together until smooth. Stir herb mixture and cheese into batter. Let stand, covered, at room temperature for 1 hour.
Preheat oven to 425.
Divide batter evenly among 6 greased popover cups (or 12 muffin tins).
Bake for 30-35 minutes until puffed and browned.

6 servings

Note - can substitute any choice of herbs, seasonings or cheese for the sage, scallions and parmesan
