Hard Boiled Eggs

Place eggs in pan, cover with cold water to an inch above eggs.
Cover and bring to a boil, turn off heat and let sit (covered) 12-13 minutes for large eggs. (may need to adjust time for different size eggs)
Pour off hot water, cover with cold ice water, replace water/ice as necessary until cooled.
Tip: Before cooking, tap fat end of egg gently (do not break shell) with spoon until sound is different - that is the membrane releasing making eggs easier to peel.

Steamed
Fill saucepan with 1 inch of water, bring to rolling boil over high heat.
Add steamer basket and eggs.
Cover pan, reduce heat to med and cook eggs for 14 minutes.
While eggs are cooking, make a water bath with ice cubes and cold water.
Use slotted spoon to transfer cooked eggs to ice bath and let cool for 15 minutes.
Refrigerate until ready to eat.
