Fried Egg Sandwich with Tomato, Onion and Cheese

Butter
One egg per sandwich
Sliced cheese, such as cheddar
Thinly sliced onion
Thinly sliced tomato
Salt and pepper to taste
Good sandwich bread, lightly toasted
Mayonnaise for spreading (optional)
Fried bacon slices (optional)

Cook egg in butter - with a fork or spatula, stir the eggs until the whites and yolks have almost combined. Cook the eggs just until the bottom has set. Top with cheese, onion and tomato, salt and pepper. To finish, you can either put on a lid until the tomato and onion are warm and cheese has melted or you can place the pan under a heated broiler until the tomato is lightly browned. Slice into sandwich-size portions. Place in sandwich bread spread with mayonnaise and top with optional bacon, if desired.
