Egg Salad

6 hard cooked eggs, chopped
1 stalk celery, chopped
1/4 cup mayo
2 tsp vinegar
1 tsp prepared mustard
1/4 tsp salt
Pepper to taste

Optional additions:
1 green onion, minced
Green or black olives, chopped
Dill pickle or pickle relish
Red pepper, minced
Cherry tomatoes

Combine all salad ingredients plus optional ingredients.

Lowfat - substitute 2 whole + 4 whites for the eggs, and 1 1/2 T lowfat mayo for the 1/4 cup reg. mayo. Serve on 1/2 pita.
