Healthy Baked Oatmeal
Source: combination of recipes
2 cups old fashioned oats (I like to occasionally use Bob's 5 grain cereal)
1 tsp baking powder
1 tsp ground cinnamon
pinch of salt
2 T maple syrup (can sub brown sugar)
1/3 cup chopped pecans or walnuts
2 eggs, beaten
1 1/2 cups milk
1 tsp vanilla
1/2 cup unsweetened apple sauce
optional: 1 mashed banana
Combine all ingredients, stir well to blend.
Pour into a 9" pie plate that has been sprayed with cooking spray.
Bake at 350 for 35-40 minutes or until toothpick inserted into the center comes out clean.
Serve with fresh fruit and yogurt.
Makes 8 servings.
