Baked Eggs

1 tsp butter, melted or cooking spray
1 egg
1 T cream
salt and pepper
1 T grated cheese

Optional:
green onion or chives
shallot
diced tomatoes
herbs - parsley, tarragon, thyme
canadian bacon
mushrooms
spinach

Butter or spray a ramekin or muffin tin. Optional ingredients can be put on bottom or top of egg. Crack egg into tin, drizzle with cream, season with salt and pepper, sprinkle with cheese. Bake at 425 degrees for 10-15 minutes or until the white is firm. Serve immediately with bisquit or english muffin (layer canadian bacon and tomato on muffin, if not in eggs).
Makes 1 serving (use a 6 or 12 muffin pan to make more servings at a time)
