Rice Pudding With Cooked or Leftover Rice

2 cups milk
1/3 cup sugar
2 cups cooked rice
2-3 Tbsp. butter
1 tsp. vanilla

Combine all except vanilla in a saucepan. Simmer until thick. (20-40 min) Remove from heat. Add vanilla.
Oprtional - stir in a little cinnamon and/or raisins if desired.
Let cool to room temperature, then chill.
