Peach Cobbler
Source: adapted from America's Test Kitchen Cookbook

1 1/4 lbs peaches or nectarines (4-5)
2 tsp cornstarch
1/3 cup sugar (more if needed)
1 tsp vanilla
opt: pinch cloves, nutmeg or cinnamon

Peel. pit and slice peaches, stir in remaining ingredients. Place in a 9" deep dish pie pan.
Place pie pan on rimmed baking sheet and bake at 400 for 20 minutes.

1 cup flour
1/4 cup sugar
2 tsp baking powder
1/4 tsp baking soda
1/4 salt
1/3 cup buttermilk
1/4 cup unsalted butter, melted and cooled
1/2 tsp vanilla

While the fruit is baking, whisk the flour, sugar, baking powder, baking soda and salt together in a large bowl.
In a separate bowl, whisk together the buttermilk, melted butter and vanilla.
Gently stir buttermilk mixture into the flour mixture just until combined.
Remove fruit filling from oven and top with dough, in rough clumps. Optional: sprinkle with cinnamon sugar.
Return to oven and bake 15-20 minutes more.
Makes 4-6 servings
