Blueberry Fool
Source: Family Circle Quick Menu Cookbook

1 pint blueberries
1/4 cup sugar
1 1/2 tsp cornstarch
1 tsp grated lemon rind
1 pkg (3 oz) cream cheese
1/4 cup 10x sugar
1 tsp vanilla
1 cup heavy cream

1. Place blueberries in medium size saucepan; mix sugar and cornstarch; sprinkle over berries. Cook over medium heat, stirring often and crushing a few berries, until mixture thickens slightly and bubbles 1 minute.
2. Remove from heat, stir in lemon rind, and cool completely. Pour into a 4 to 5 cup glass bowl, cover, refrigerate several hours.
3. To serve, beat cream cheese until soft. Blend in 10x sugar and vanilla, add cream, and beat until fluffy and soft peaks form.
4. Spoon cream mixture on top of blueberries; then gently fold in, leaving streaks of blue and white. Sprinkle with additional lemon rind, if desired. Refrigerate until serving time.

Makes 4 servings.
Cindy's note - can substitute other fruits for the blueberries.
