Baked Apple Pudding

1 cup sugar
1/4 cup butter, softened
1 egg
2 cups apples, peeled, shredded (2 large or 3-4 small apples)
1 cup flour
1 tsp soda
1 tsp cinnamon
3/4 tsp nutmeg
1/4 tsp salt
Gradually add sugar to butter, creaming thoroughly.
Add egg, beat well.
Add apples all at once to creamed mixture.
Stir in sifted dry ingredients.
Bake in a greased 8x8x2 inch pan in a moderate (300) oven for 45 minutes.
Cut in squares. Serve warm with vanilla sauce.
Vanilla Sauce:
1/2 cup butter
1/2 cup sugar (opt: use 1/2 brown sugar)
1/2 cup light cream
1 1/2 tsp vanilla
dash nutmeg
Heat butter, sugar and cream together over boiling water or very low heat, 10-15 minutes, stirring occasionally, until blended and slightly thickened. Do not boil. Add vanilla and nutmeg.
